Saag Paneer

Saag paneer is a classic Indian dish of cooked spinach mixed with cubes of fried paneer cheese. It is one of the more well known Indian dishes, loved by most!  Thickened with cream, it's a hearty and filling vegetarian meal.

Serves 4-6

 

Here’s what you need:

1-16oz pkg chopped spinach, frozen
7 oz paneer
good quality oil 
1 med onion, minced
1″ piece ginger, minced
1 clove garlic, minced
Water – 2 cups
1 large tomato, or 1 14oz can pureed
1 tsp Garam Masala 
1 tsp ground cumin

1 tsp ground coriander

Red chili powder, to taste
Salt - to taste
½ tsp ground turmeric
1/4 cup heavy whipping cream or to taste

 

Here’s what you do:

  • Cook frozen spinach with 1/4 cup water for about 5 minutes, drain
  • Blend cooked spinach to desired texture (avoid over-blending)
  • Heat ¼ cup Oil in a large skillet on high heat. Add in the minced onions, stir, cover and cook 10-15 minutes, until caramelized
  • Add in the ginger and garlic. Cook for another 2-3 minutes
  • Add tomatoes, cover and cook till the oil separates from the mixture
  • Stir frequently to prevent burning
  • While the onion and tomato mixture is cooking, cube the paneer 
  • Heat about 2 tsp oil.  Brown the paneer cubes on all sides
  • Remove from the pan onto paper towel to soak the excess oil.
  • Put the Paneer into a bowl of cold water. Let it sit for 5 minutes.
  • Dry roast the cumin and coriander—cool and grind.
  • Add cumin, coriander, turmeric, and garam masala to the tomato and onion mixture.
  • Salt to taste
  • Add the spinach and mix well
  • Add in the desired amount of cream.  Mix and cook for another few minutes.
  • Gently squeeze the water out of the Paneer and add to the spinach.
  • Mix gently and serve hot.
